The stainless cladding will stay pristine while the cutting edge gracefully ages showing character as it builds layers of blue red and grey.

80crv2 is a tough steel so you don’t have to be too worried about chipping it despite the thin edge although high quality knives should always be treated with respect. Like most carbon steels, it is easy to sharpen and keep a hair-popping edge.
